This is a very nice, easy recipe, if you want to “bake a pie.” Although the traditional Cornish pasty is filled with beef, diced potato, turnip and other veggies, you can use your imagination, and fill it as you wish. The pasty in the picture is filled with green beans, chicken, corn, wild mushrooms, garlic and onion. I am only giving you the recipe for the Cornish Pasty Dough, with quantities reduced for 3 persons.
- 75 g butter
- 50 ml olive oll
- 150 ml hot water
- 250 g plain flour
- ½ tablespoon sea salt
- 1 egg, beaten
- polenta for dusting the baking tray
- In a sauce pan, bring water, butter and olive oil to a boil. Remove from heat, and stir in flour and salt, till homogenized. Tip the dough onto a floured surface, and shape it into a ball. Put the ball into a floured bowl, cover with cling film and refrigerate for at least 30 minutes, or as long as it takes you to make the filling.
